An Ürgüp winery founded in 1943 by a retired teacher, run by the same family for four generations, with a cellar carved by hand into the tuff.
Turasan is a winery in the Temenni quarter of Ürgüp, on Tevfik Fikret Caddesi. Hasan Turasan, a retired teacher, founded it in 1943 to give the grapes of the local growers the value they deserved. Four generations of his family have run it since, and its wine still rests in a cellar carved by hand into the soft tuff rock.
Hasan Turasan began with simple means in 1943. In 1959, his son Rüştü Turasan took over, and over three decades he built new facilities and raised the winery's output. His work helped the vineyards of Cappadocia become known across Turkey.
The founder's grandson, also named Hasan Turasan, joined the family company in 1984 and has led it since 1990. From the 1990s on, he planted modern high-trellis vineyards and brought in French oenologists as advisers. He also created the Seneler collection. Today, a fourth generation is preparing to carry the family name on.
Tuff is soft enough to carve by hand, yet strong enough to stand on its own once it is cut. So in 1943, the family dug its first cellar into the rock with hammer and chisel. Inside, the stone keeps the air between 11 and 16 °C (52 and 61 °F) all year, with no daylight and no machines to cool it. Wine rests in French oak barrels for 6 to 18 months, then lies flat in its bottles for at least 3 months before it leaves.

The vineyards lie at about 1,000 to 1,200 meters (3,300 to 3,900 feet), on volcanic soil that holds water well. Warm days and cold nights let the grapes ripen slowly. Look for Emir, the white grape of the Nevşehir plateau, crisp with citrus and green apple. Narince is a balanced white with notes of flowers and ripe pear. Among the reds, Kalecik Karası is light and fruity, and Öküzgözü tastes of sour cherry and black mulberry. For more on these grapes, read our guide to Cappadocia Wine: Emir, Cave Cellars and Ürgüp’s Wineries.
We suggest it for a wine afternoon in Ürgüp, after a morning in the valleys. It also suits anyone curious about how a cave cellar works.
Our Cappadocia sunset wine tour walks through the old quarter of Ürgüp before a tasting at a local winery, and ends at Uçhisar Castle. Tell us if you want Turasan on the day, and we will ask the winery. For estates in other regions, see our Wineries to Visit in Turkey: Urla, Bozcaada, Cappadocia and Bodrum.
We book your tasting at Turasan as part of your Cappadocia day.
