Seten Restaurant

Anatolian cooking above Göreme, with women of the village making sarma in the courtyard and a wine cellar in an old cave press room.

Overview

Seten Restaurant sits on Çakmaklı Sokak, on the hill above Göreme, and looks out over the town and the valleys. It opened in May 2010 and cooks the food of Cappadocia with local produce. Seten appears in the current MICHELIN Guide selection for Nevşehir. It takes no reservations, so arrive before sunset for the view.

The Story of Seten Restaurant

From a guesthouse to a kitchen

The story starts with Ali Yavuz, who was born in Cappadocia and turned his own home into a small guesthouse in the early 1990s: the Kelebek Special Cave Hotel. As the hotel grew, he wanted a place for the true cooking of the region, and Seten was born from that wish.

A stone mill and a cave press

Seten is the name of the old round stone mill once used across Anatolia to grind wheat, and one still stands here. The restaurant has an original cave room where grapes were pressed into wine for centuries. Today it is the wine cellar, where Seten still makes its own wine in the old way and offers tastings.

What to Eat at Seten Restaurant

Every day, women from Göreme cook in the courtyard, over an open fire, in the tandır oven or at low wooden tables. They roll yaprak sarma, stuff squash blossoms for çiçek dolması, bake flatbread and make soups. Our guide to Turkish dolma explains the stuffed dishes. In the evening, try the testi kebab, cooked in a clay pot over the fire, or slow-cooked tandır meat. The kitchen buys from nearby villages: garlic from Topaç, eggplant from Ayhan near Avanos, beans from Derinkuyu and yogurt from Kalaba.

Who Seten Restaurant Suits

We suggest it for a first dinner in Cappadocia, when you want the local table and a view of the valleys. It also suits wine lovers, who can start with a tasting in the cave cellar.

Our suggestion

Spend the day on our North Cappadocia tour, from the Göreme Open-Air Museum to the fairy chimneys, then walk up to Seten before sunset. For wine before dinner, see our Cappadocia sunset wine tour, and read more in Cappadocia Wine: Emir, Cave Cellars and Ürgüp’s Wineries.

We reserve your table at Seten Restaurant.
